Chicken and Broccoli Curry

Who doesn’t love a good curry?! This is a fun twist on the classic combination of chicken and broccoli that will have your mouth watering. Some coconut milk and Indian spices really changes it up.

Ingredients

3 large chicken breasts, cubed
1 large broccoli, cut into florets
1/2 small onion, chopped
1/2 cup coconut milk
2 Tbsp butter
Optional, to garnish: fresh cilantro

Curry
2 garlic cloves, minced
1 Tbsp fresh ginger, minced
1 Tbsp curry powder
1 tsp ground turmeric
Salt and pepper, to taste

Directions

In a small bowl, combine the ingredients for the curry and set aside.

In a large skillet, melt butter over medium-high heat.

Add the curry mix and toast for 1 min.

Add the onion and sautee for 2-3 min.

Add the diced chicken and brown for about 5 min, stirring often.

Finally, add the broccoli and coconut milk. Stir well, cover and let simmer 12-15 min.

Serve with your choice of side, such as cauliflower or konjac rice, Indian kachumber salad (see our Kachumber recipe).

Optionally, serve garnished with fresh cilantro.
