Asian Cucumber and Avocado Salad (Keto)

This Asian cucumber and avocado salad makes a healthy yet light meal or can be served as a side. It’s up to you!

Drizzled with a fragrant dressing, this salad is one of those recipe that I keep going back to, again and again. 🥑

Ingredients

3 avocados, diced
1 English cucumber, diced
1/3 cup cilantro, chopped
1/4 cup red onion, chopped

Asian dressing
1 Tbsp avocado oil
2 tsp toasted sesame oil
2 tsp rice vinegar
1 tsp soy sauce
Pinch of garlic powder, salt and pepper

For garnish: black sesame seeds and sliced thai chili

Directions

In a small bowl, whisk together the dressing ingredients.

In a large bowl, combine the avocado, cucumber, cilantro and onion. Drizzle with the dressing and toss.
