Tahini Lemon Cookies (Keto)
These tahini lemon cookies are sugar-free, grain-free and vegan, but you would never guess it, that’s how delicious they are! 😉
They have a beautiful snap to them and are packed with lemony goodness.
Ingredients
1 cup almond flour
1/2 cup monkfruit sweetener
1/4 cup tahini
1/4 cup unsweetened almond milk
1/2 lemon
1 tsp baking powder

Directions
Preheat oven to 350F.
Set aside the lemon, and combine all the ingredients in a medium bowl.
Zest the lemon half into the bowl and squeeze in the juice.
Mix the ingredients until well combined.
Spoon the batter onto a parchment-lined baking sheet, leaving about 1 inch between each cookie.
Bake 18-20 min, until golden.
Once baked, remove the cookies from the oven and enjoy!
