Simple Coleslaw (Keto)
Somehow, I always end up with leftover cabbage in my fridge.
Throwing together this simple coleslaw is one of my favourite ways of using it up. It makes a quick and yummy side that pairs with almost any meal!
Ingredients
4 cups cabbage, shredded
1/4 cup carrots, grated
1 scallion, slice
1 Tbsp avocado oil
2 tsp apple cider vinegar
2 tsp Swerve brown
Salt and pepper, to taste

Directions
In a large bowl, toss together the cabbage, carrots and scallion. Any colour of cabbage works for the coleslaw.
In a small bowl, whisk together the avocado oil, apple cider vinegar, Swerve brown, then season with salt and pepper, to taste.
Drizzle the dressing over the slaw and toss well.
Let rest at least 5 min before serving.
Enjoy with grilled meats or another main of your choice.
