Pecan-Crusted Maple Pork Tenderloin (Keto)

This easy-to-make pork tenderloin is marinated, then crusted in pecans for a succulent result. The combination of maple and pecan is amazing, making the meat sweet and savoury.

Leftovers (if any) can be reheated or served up cold in sandwiches and wraps. Yum!

Ingredients

1 lbs (0.5 kg) pork tenderloin
1/4 cup ground pecans
2 Tbsp apple cider vinegar
1 Tbsp sugar-free maple syrup
1 tsp Swerve brown
1/2 tsp salt
Salt and pepper, to taste

Directions

Place the pork tenderloin in a large ziploc or other container. Add the apple cider vinegar, sugar-free maple syrup and 1/2 tsp of salt. Give the ingredients a good shake, then refrigerate and allow to marinate at least 4 hours.

When the pork is done marinating, preheat oven to 400F.

Line a baking sheet with aluminium, and grease it.

Place the ground pecans on a clean cutting board or in a large plate.

Remove the pork tenderloin from the marinade. Season it with the Swerve brown, then salt and pepper, to taste.

Rub the seasoning on the tenderloin, then roll it in the ground pecans to coat it evenly.

Transfer the pecan-crusted pork tenderloin to the baking sheet, and bake for 25-30 min.

Remove the tenderloin from the oven and allow it to rest 5 min before slicing.

The pecan-crusted maple pork tenderloin can be served with your side of choice. Leftovers can be refrigerated and reheated, or even served cold in a sandwich or wrap, etc.
