Lemon-Garlic Chicken Brochettes (Keto)
These Lebanese-inspired lemon-garlic chicken brochettes are easy to make, delicious and pair perfectly with a keto-fied tabbouleh salad (see our Keto Tabbouleh Salad recipe)! It’s the perfect meal for a weeknight or warm summer day.
Ingredients
4 chicken breasts, diced
2 garlic cloves, minced
1 Tbsp extra virgin olive oil
1/2 lemon, zested and juiced
Salt and pepper, to taste

Directions
In a large bowl, whisk together the garlic, olive oil, and lemon zest and juice to make the marinade. Season to taste with salt and pepper.
Add the chicken, toss until evenly coated, then cover and refrigerate 1 hour.
If using wooden skewers, be sure to soak them in water, while the chicken marinates.
Before pulling the chicken out of the fridge, preheat oven to 400F.
Skewer the chicken, then place on a baking drip pan or aluminium-lined baking sheet.
Bake 30-35 min, switching to broil for the last 2-3 min.
