Keto Pavlova

This pavlova topped with sugar-free candied nuts is a definite showstopper! 🤩

Most pavlovas are then topped with fresh berries, but for a Holiday twist, I used my sugar-free candied macadamia and brasil nuts, a drizzle of keto maple syrup and some sea salt dark chocolate shavings.

Ingredients

Pavlova
6 egg whites, room temperature
1/2 cup powdered stevia**
1 tsp xanthan gum
1/2 tsp vanilla extract
1/2 tsp lemon juice
1/4 tsp cream of tartar

Whipped cream
1/2 cup 35% cream
1 Tbsp stevia
1/2 tsp vanilla extract

Optional, for garnish: fresh berries, candied nuts (see our Sugar-free Candied Nut recipe), keto maple syrup, sugar-free dark chocolate shavings

** Used Splenda Naturals Stevia, grinded down to powdered, but it can be substituted any powedered sweetener, ex. powdered erythritol, etc.

Directions

Preheat oven to 250F.

Using a handmixer, beat the egg whites until frothy. Continue mixing, and gradually add the powdered stevia and cream of tartar.

Once the egg whites begin to form stiff peaks, beat in xanthan gum, vanilla extract and lemon juice.

Transfer the pavlova batter to a parchment lined baking sheet, forming a elevated patty in a cake shape.

Bake for 60 min, then turn off the oven. Leave the pavlova in the closed oven for 4 hours to overnight. This will allow the exterior to dry and crisp up.

Before serving, prepare the whipped cream. Whisk together the 35% cream, stevia and vanilla extract until they form stiff peaks, about 5 min.

Top the pavlova with whipped cream, then garnish with toppings of choice.
