Keto Kachumber (Indian Cucumber Salad)

Kachumber is an Indian cucumber, tomato and onion salad.

This ketofied version is crisp and delicious, making for an excellent meal salad or sidedish.

Ingredients

1 English cucumber, diced
1 small tomato, diced
8 radishes, thinly sliced
1 jalapeño, diced
1/4 cup red onion, diced
Optional: 1-2 hard boiled eggs, pinch of curry powder

Dressing
Juice of 1/2 lemon
1 sprig of mint, minced
2 Tbsp cilantro, chopped
1 tsp ground cumin
Salt and pepper to taste

Directions

In a large bowl, whisk together the ingredients for the dressing.

Add the kachumber vegetables, then toss again until everything is evenly coated.

To make it into a meal salad, just top the kachumber with 1 or 2 hard-boiled eggs, and sprinkle with a little curry powder.

Kachumber also makes a great side to any spiced meal, such as an Idian dry-rub salmon, etc.
