Chaffle with Mascarpone Whipped Cream

There are a whole lot of chaffle recipes out there, both sweet and savoury, and one-pagers with dozens of chaffle versions.

This is a simple mascarpone chaffle recipe I cooked up, but the real ⭐star here is the decadent mascarpone whipped cream. Great just sprinkled with a little cinnamon or going all out with fresh berries and drizzled with chocolate, this is a brunch fan’s dream!

Ingredients

Chaffles
2 large eggs
1/4 cup, plus 2 Tbsp almond flour
2 Tbsp mascarpone
1 tsp stevia
1/2 tsp vanilla extract
1/4 tsp baking powder

Mascarpone whipped cream
1/2 cup 35% cream
2 Tbsp mascarpone
2 tsp stevia
1/2 tsp vanilla extract

Directions

Preheat your waffle iron.

In a large bowl, using a hand-mixer, whisk together the chaffle ingredients to an even batter.

Once the waffle iron is ready, pour in the batter, following product instructions. Depending on size and type, you may need to work in 2 to 4 batches.

While the chaffles cook, combine the mascarpone whipped cream ingredients in a medium bowl. Whisk into stiff peaks using the hand-mixer.

Once the chaffles are ready, serve topped with mascarpone whipped cream, and garnish to taste. This recipe is amazing with just a sprinkle of ground cinnamon. You can also add fresh berries, melted chocolate, sugar-free syrup, etc.
