Beef Barbacoa (Keto)

This beef barbacoa recipe is jam-packed with flavour and loved by the whole family! The meat is braised, then finished off to tender perfection in the slow cooker, making it a great weeknight (or any other night) meal.

Ingredients

2 lbs (1 kg) beef roast, cubed
1 ½ cups beef broth
1 lime, juiced
2-3 chilis in adobo sauce, minced
2 garlic cloves, minced
3 Tbsp avocado oil, divided
2 Tbsp ground cumin
1 Tbsp smoked paprika
1 Tbsp dry oregano
1 Tbsp and 1/2 tsp kosher salt, divided
1 tsp black pepper
1/2 tsp ground clove

Recommended for serving: lettuce wraps, low carb tortillas or wrap, or over lettuce

Recommended garnishes: sliced radishes, shredded red cabbage, chopped cilantro, sliced jalapeño, pickled red onion, diced cucumber, fresh lime juice

Directions

Toss the cubed beef in 1 Tbsp of kosher salt and set aside.

In a large pan, warm 1 Tbsp avocado oil over medium-high heat. Add the beef cubes to the pan and sear on all sides.

Once the beef is seared, transfer it to the slow cooker. Add the remaining ingredients to the slow cooker as well and stir.

Cover and let it cook on low for 8 hours.

Once cooked, remove the beef cubes, shred the meat, then mix back together with the barbacao sauce from the slow cooker.

This amazing beef barbacao can be served in lettuce wraps, low carb tortillas or wraps, or even turned into a salad, by serving it over lettuce. Each option is AMAZING!

Garnish to taste using sliced radishes, shredded red cabbage, chopped cilantro, sliced jalapeño, pickled red onion, diced cucumber, fresh lime juice, or anything else that you can dream up!
